Great question. If you’re making the recipe as written with 1/2 pound ground beef and 1/2 pound Italian sausage, you can add 1 slice of bread made into breadcrumbs, or 1/4 cup prepared breadcrumbs. If you double the recipe, you can double the breadcrumbs to 1/2 cup (2 bread slices). Hope this helps! ~Eliza

Didn’t you state in earlier instructions on this page that the one slice of bread would yield 1/4 cup crumbs (for substitution purposes). So, I figured 1/2 cup of crumbs for 1 lb. beef and 1 lb. sausage. Now you’re stating that 1/2 cup of crumbs, not 1/4 cup, is applicable for the original recipe as printed? I’m confused now!

I’ve made many meatballs in my life but these are by far the best I’ve ever had and they’ve been deemed my husband’s favorite. I used breadcrumbs because they were on hand and hot Italian sausage. Thank you for the incredible recipe.

These are such great questions! Regarding the bread crumbs, aim for about 1/2 cup bread crumbs. The amount doesn’t need to be precise, and your keto bun should work just fine. Adding Parmesan cheese sounds like a splendid idea! I’d add about 1/4 cup shredded or grated cheese to the mixture. Regarding 80 percent ground beef, that is fine. The meatballs will shrink a little more as the extra fat cooks out. If you want to offset that, you can add a little more ground beef but it’s not crucial. This is a very forgiving recipe! ~Eliza
